Ingredients

  • 1 kg Skinless Salmon Fillets
  • 300 g Uncooked Quinoa
  • 720 ml Water or Low-Sodium Fish Broth
  • 200 g Diced Zucchini
  • 150 g Chopped Broccoli Florets
  • 100 g Frozen Peas
  • 15 ml Coconut Oil ((1 tbsp))
  • 2 g Dried Dill ((optional))

  • Rinse the quinoa thoroughly. In a medium pot,combine the quinoa and water broth. Bring to a boil, reduce heat to low, cover,and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 more minutes. Fluff with a fork.

  • While the quinoa cooks, steam the diced zucchini and broccoli florets until tender, about 8-10 minutes. Add the frozen peas in the last 2 minutes to thaw.

  • Place salmon fillets on a parchment-lined baking sheet. Bake at 190°C (375°F) for 12-15 minutes, or until the fish flakes easily with a fork. Let cool, then use your fingers to check for and remove any small bones. Flake the meat into small pieces.

  • In a large bowl, gently combine the cooked quinoa, flaked salmon, and steamed vegetables. Stir in the coconut oil and dried dill (if using). Allow to cool completely before serving or portioning.
